I used to insist on a specific brand of store bought hummus. Now I insist on making my own. It’s a heck of a lot cheaper and in the opinion of me and my family, it’s so much tastier. You are not going to believe how simple it is to make, and how yummy your hummus is going to taste!
Hummus is very nutritious and a great source of fiber! (Beans, beans, good for the heart. The more you eat, the more you….) You can do so many things with hummus. Serve it as a dip with fresh vegetables or with pita chips or pita bread. My favorite is to make grilled chicken breast or beef marinated in Dad’s Simple Marinade and serve it with hummus and tabouli. Enjoy!
Ingredients
1 (15-ounce) can chickpeas drained and rinsed
1/4 cup (60 ml) lemon juice (squeezed lemon always preferred but not essential)
1/4 cup (60 ml) well-stirred tahini (Krinos is a great brand)
1 medium garlic clove
1/8 of white or yellow onion
2 tablespoons extra-virgin olive oil
1/2 teaspoon ground cumin
1/2 teaspoon salt
2 to 3 tablespoons water
Note: You might also consider doubling the recipe for a larger serving.
Directions
- Place ingredients in blender or Ninja™ smoothie attachment or nutribullet™
- Blend until smooth. Add water as necessary to enable blending.
- Chill in the refrigerator for 2 hours before serving
- Serve with drizzle of olive oil on top and a sprinkle of paprika.
